Pérail is a small round of soft sheep's milk cheese with a thin bloomy rind and a paste that becomes almost impossibly creamy and runny at room temperature — perfect for spooning straight onto bread. The flavour is gentle and lactic with sweet, grassy notes, a whisper of hay and the distinctive warmth of sheep's milk underneath.
