Product Details
One of Normandy's oldest and boldest cheeses — nicknamed "the Colonel" for the five bands of dried reed wrapped around its circumference, which hold its shape during ageing. Beneath the deep amber, washed rind lies a supple, creamy paste with a strong, assertive aroma and a full-flavoured, meaty character with earthy, spicy depth. Not for the faint-hearted — but for those who love it, it's one of the great French rinds.
Pair with a robust Normandy cider, a tannic Bordeaux, or a glass of Calvados.
