Amedei Blanco de Criollo 70% Dark Chocolate
Type: Dark Chocolate
Cacao Percentage:
70%

Tasting Summary: honey · dried plum · jam · and quietly extraordinary

Tasting Notes: meet Amedei's fourth Golden Bean - a bar built around one of Peru's rarest, and most prized cacaos.

The Piura Gran Blanco is a rare Criollo variety from the remote northern plantations of Peru, and it produces chocolate that is rich and delicate at the same time.

Expect notes of almond and honey, a lingering dried plum sweetness, and a melt that is smooth, balanced, and quietly unforgettable.

Only 20,000 bars are made each year. Each one is hand numbered.

Bean Origin: Peru – Piura Gran Blanco (Criollo)
Made in: Tuscany, Italy
Bar Size: 50 g

Story: Cecilia Tessieri, founder of Amedei, travelled to the remote plantations of northern Peru to source this cacao herself. The Piura Gran Blanco beans are fermented for seven days in tiered wooden boxes, then sun dried slowly in solar tunnels for up to twelve days - a level of care that is more craft than commerce. It earned Amedei their fourth Golden Bean from the Academy of Chocolate, and it's clear why. The recipe is minimal by design: letting the bean do the talking.

Fiamma Tip: Let it melt slowly. This one rewards patience. If you want a pairing, try a fine Pisco Sour to echo the Peruvian origin, or keep it simple with a small glass of aged rum.
